Gruyere Gougeres

The perfect Cheese Puff - a great appetizer for your next party!

Serving Size: Makes about 60-80 Gougeres Ingredients
  • 1/2 Cup Whole Milk
  • 1/2 Cup Water
  • 1 Stick Butter
  • 3/4 Teaspoon Salt
  • 1 Cup All Purpose Flour
  • 6 Eggs
  • 1 1/2 Cups Gruyere (shredded)
  • 2 T Parmesan Cheese (grated)
  • 1 1/2 tsps Dijon Mustard
  • 1/8 tsps Cayenne
  • Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. In a heavy saucepan over medium heat, bring the milk, water, butter and salt to a rolling boil. Add the flour all at once, stirring quickly with a wooden spoon until the dough starts to come together and pulls away from the sides of the pot (this should take about 30 seconds). Remove the pot from the heat and let sit 5 minutes.
  • Using a spatula, spoon the dough out of the pot into the bowl of an electric mixer fitted with a paddle attachment. Start to beat the dough on a medium speed, adding the eggs one at a time. After adding the eggs, turn the mixer up to high and add in the cheese, mustard, and cayenne. Mix for 3 minutes.
  • Using a measuring spoon , scoop the dough in 1 teaspoon increments about 2 inches apart on the parchment lined baking sheet (you will need to do multiple batches of this). Place the baking sheet in the oven and cook for about 8 minutes. Turn the oven down to 375 degrees and cook another 8-10 minutes until the tops turn golden brown.
  • Remove the baking sheet from the oven and serve immediately. You can also cool the gougeres and freeze them for later use! To reheat frozen gougeres, just pop them into a 350 degree oven, covered for 10 to 15 minutes.
